California Farm Made Smetana Sour Cream
This Ukrainian and Russian sour cream is richer and thicker than regular sour cream and easy to make.

* Step 1
Heat milk or yoghurt and heavy cream to 110F to 120F, add lemon juice or vinegar, stir, let culture overnight. Milk will have turned into yoghurt, then sour cream and wey. Pour off wey, save for later recipes. Let smetana cool down on countertop, smetana sour cream will thicken as it cools.
