Ring Dum Diddy

I'm going to start with a disclaimer. I am NOT a fan of spam. I am generally not a fan of American cheese. But as kids, we loved this stuff. We loved it so much, all 3 of us would stop playing, and help Mom make it. Now today it is much easier to make, with food processors, and such, but in the 60's, we used a cast iron hand grinder. We would just grind the spam, onion and cheese together. Assemble these, on regular old white bread, and broil them. It took probably 5 minutes to broil them, but the smell was awesome, and to us kids, seemed like a lifetime. Then either, the patience to allow them to cool, or burn the roof of your mouth, which we did frequently. So good. We would make 10 or so for lunch, usually. I discovered that they are easy, but have to be done a certain way for the proper flavor. So here it is, slightly adjusted for an adult palate, I.E. hot sauce and black pepper added. This is sort of a generic recipe where amount of ingredients in relation to each other is the important thing. Since it was only me, i bought a roll, and i couldn't find a small can of spam, so i tried Vienna sausages. Not as good as spam.

Cooking instructions

* Step 1

Ready your bread, i still suggest plain white bread
Image step 1

* Step 2

Butter the bread, might seem unneeded, but trust me, it's required
Image step 2

* Step 3

Prep the proper amount of onion
Image step 3

* Step 4

Chop it into small pieces, since i am making a small single serving, I'm using this, usually i use a food processor
Image step 4

* Step 5

Next do your spam, in a food processor, i add it to the onions, here I'll just stir it
Image step 5

* Step 6

Add the cheese next, grated in this case. If you are using a food processor, see small chunks and reduce it all together
Image step 6

* Step 7

If you want, add pepper and or hot sauce
Image step 7

* Step 8

Pulse to mix or in my case, stir
Image step 8

* Step 9

Spread on buttered bread evenly
Image step 9

* Step 10

Broil them. Yes, I'm using the toaster oven, however you broil them, keep an eye on them.
Image step 10

* Step 11

When they are done to your liking, remove. If giving to kids, let them cool a minute first. As kids we typically didn't like char spots, except on these, go figure. The char spots add to the flavor.
