Pumpkin Cream Cheese Swirl Muffin

Pumpkin is one of the ingredients I love the most ❤️ You can make different kinds of dishes from it. It's cheap and it contains a lot of vitamins. Today I made these special muffins. They're super moist and the cream cheese melts in your mouth! 😋 IG: @jenscookingdiary @jenscookdineandtravel

Cooking instructions

* Step 1

Preheat oven 375 and place paper baking cups in muffin pan.

* Step 2

In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Set aside.

* Step 3

In a large bowl, whisk together the can of pumpkin, sugar, and brown sugar.

* Step 4

Beat in eggs, vegetable oil, and vanilla extract.

* Step 5

Slowly whisk in the flour mixture until there are no lumps; fill muffin tins 3/4 full.

* Step 6

In a medium bowl, beat cream cheese until smooth.

* Step 7

Add in sugar, yolk, and vanilla extract. Beat until well blended.

* Step 8

Top each muffin with 1 tbsp of cream cheese mixture, use a toothpick to swirl the batter.

* Step 9

Bake muffin 18-20 minutes or until a toothpick inserted in the center comes out clean.

* Step 10

Serve the muffins at room temperature or even slightly chilled with a cup of warm tea or coffee! 😋
