Cooking instructions

* Step 1

Scrub the truffles gently under cold water and pat them dry with kitchen paper, grate half of them through the smallest holes of a cheese grater and half slices.

Put the truffles with half the olive oil in a small saucepan and cook over a very low heat for 1 minute.

Take off the heat, add the garlic and anchovies and mash the mixture with a fork. Return to the heat and cook very gently for 5 minutes, stirring the whole time. The heat must be very low - on no account should the sauce be allowed to boil. Taste and add salt if necessary and a generous amount of pepper.

Cook the spaghetti in a boiling water until al dente. Toss with remaining olive oil in a warmed serving dish and spoon over the truffle sauce.

Meanwhile, grill the wagyu steak. I like my steak rare / blue.

Boil the broccolini in salted water and drain.

Serve immediately the spaghetti with Wagyu steak and boil broccolini. Enjoy with beautiful white wine.
