Roasted Eggplant with Miso and Cheese
When I went to the vegetable shop, my neighbor bought this big eggplant. And I asked her how she would cook it. So delicious way to eat eggplant‼️

* Step 1
Cut eggplant half and roast in pan with vegetable oil until softened.
* Step 2
Put miso and shredded cheese on eggplant and roast more until cheese is melted. I chose sweet miso today, but please adjust it according to the taste and saltiness of the miso.
