Cooking instructions

* Step 1

Heat oil in a pan. Furthermore, saute bay leaf, cinnamon stick and cumin seeds till they turn aromatic.

* Step 2

Add finely chopped onions and ginger-garlic paste. saute till it turns golden brown. also add tomatoes and saute till they start releasing oil.

* Step 3

Further, add chilli powder, turmeric, coriander powder, cumin powder, aamchur powder, garam masala and salt. saute for a minute, then add soaked chickpea. make sure to soak chickpea overnight.

Followed by 2 cups of water, further, give a good mix. and check the seasonings.

Pressure cook for 7-8 whistles on medium flame.

Allow the pressure to release by itself before opening the cooker. mix well and garnish coriander leaves. Finally, serve with bhatura.

Mix everything well.

Knead into a dough for 5 to 10 minutes or until it is smooth. Add a little flour if it is too wet.

Knead the dough again. Shape into 12 to 15 balls.

Roll each into 4 to 5-inch discs. Heat oil or ghee and deep fry the bhatura in the same way as you would fry pooris. The oil has to be moderately hot. Use medium to medium-high flame while frying. When one side is golden, gently flip and fry the second side.

Drain the bhatura on kitchen paper napkins to remove the excess oil.

* Step 12

Ready to serve chhole bhature.
