Saag’er Ghonto

A medley of your favourite veggies and leafy greens cooked with minimum spices, makes this the most revered comfort food

Cooking instructions

* Step 1

Wash, Deskin and chop the veggies into small pieces/cubes

* Step 2

Wash and chop the greens and their stems into small pieces

* Step 3

Blanch the greens covered in 2 cups of hot water until tender

* Step 4

Heat oil in a wok and add the paanch phoron seeds

* Step 5

As the seeds splutter reduce heat and add dry red chilli,ginger paste, asafoetida and Bay leaves

* Step 6

After sautéing for 2-3 minutes, add the veggies and dry spices

* Step 7

Mix well until combined and cook covered on Low heat for 5-7 minutes

* Step 8

Add salt and sugar

* Step 9

Next add the greens with their juices and let the curry cook in the juices of the greens and veggies covered

* Step 10

Take off heat once he veggies have softened and tender

* Step 11

Serve warm with steamed ghee rice
