Lemon Rice
Lemon rice is a famous South Indian rice dish. This rice dish is bright yellow in colour and is quite tangy. You can make this with freshly cooked rice or with leftover rice. It does not require too many ingredients. Only a few spices are needed to make this flavourful dish. You can serve this rice with any Indian curry. This is one of the easiest rice recipes I have ever tried. It is quick, easy and delicious. Hope you like the recipe. If so, do share your feedback in the comment section.
Cooking instructions
* Step 1
Boil water in a pot with some salt. Then add the washed rice. Cook until done. It can take around 10-15 minutes. After that strain the rice with the help of a colander.
* Step 2
In a wok, heat oil on medium heat. Add the mustard seeds.
* Step 3
Once the seeds crackle, add dried red chillies. Fry for a few seconds.
* Step 4
Add turmeric powder and cook for a minute or until it's raw smell goes away.
* Step 5
Then add the chopped curry leaves, cook for another minute.
* Step 6
Add the rice and give it a nice mix. But be gentle as the rice can break.
* Step 7
Lower the heat, add salt, lemon juice and lemon zest. Mix again. Remove from heat.
* Step 8
Garnish the rice with fresh coriander leaves and lemon slices.
