Crispy Rice Papdi
Cooking instructions
* Step 1
Firstly, wash the moong dal. Add water and soak it for one hour.
* Step 2
In a grinding jar add ginger, green chillies, cumin seeds and salt and grind it to a coarse paste. Set it aside.
* Step 3
In a mixing bowl, add the rice flour, cumin seeds, the ground ginger-green chilli paste and the soaked moong dal.
* Step 4
Mix it well. Then add butter and the chopped coriander and curry leaves. Mix it well.
* Step 5
Add warm water, little at a time, and knead it into a soft dough. Keep it covered.
* Step 6
Divide the dough into two parts. Take a sheet of butter paper. Grease the butter paper with oil.
* Step 7
Place one part of the dough on the greased butter paper. Place another sheet of butter paper over it. First spread it evenly using a plate and then roll it.
* Step 8
Cut with a cookie cutter.
* Step 10
Heat oil in a kadai on medium flame. Carefully immerse the rice papdis in the hot oil and fry till crisp and slightly golden on both sides.
* Step 11
Remove from oil and transfer to a plate lined with paper towel.
* Step 13
Crispy Rice Papdis are ready. It can be stored in an airtight container for a month.
