Firstly, to make the dough, in a large mixing bowl add the wheat flour, salt and oil and mix it well. Add water and form it into a soft dough. Allow the dough to rest for 5-10 minutes.

To prepare the stuffing, heat oil in a pan. Add cumin seeds and allow it to sizzle for few seconds. Add the chopped green chilli and saute it for 30 seconds. Add the sliced onions and saute until the onions turn translucent.

Add the ginger garlic paste and salt and salt till the raw smell leaves. Add the steamed and mashed potato and saute for few minutes. Next add turmeric powder, coriander powder, garam masala and red chilli powder and saute for a minute.

Then add the dry mango powder and red chilli sauce and mix it well. Allow it to cook for 2-3 minutes. Remove from pan and transfer it on to a plate and allow it to cool completely.

Now to form the stuffed buns, knead the dough once again. Divide the dough into equal parts. Take each part of the dough and roll it out. Fill it with this delightful vegetable mixture. Bring all the ends together and seal it firmly. Prepare the remaining buns in a similar way and set it aside.

Heat two tablespoon of oil in a pan. Place four buns at a time in the hot oil and shallow fry on low flame until golden brown on both sides. It results in a slightly crispy crust that contrasts beautifully with the tender, flavorful interior.

Transfer to a kitchen paper towel.
