Amritsari Paneer Bhurji
Cooking instructions
* Step 1
Firstly, immerse the paneer in hot water and little salt for 10 minutes to get a super soft texture of the store bought paneer. Crumble the paneer in a plate and set it aside.
* Step 2
Roast the gram flour and set it aside.
* Step 3
In a mixing bowl, add all the ingredients mentioned above under “For Curd-Spice Mixture”. Mix until well combined and set it aside.
* Step 4
Heat oil and butter in a pan. Add cumin seeds and allow it to sizzle for few seconds. Add the chopped ginger and saute for a minute.
* Step 5
Add the chopped onions and saute until the onions turn light pink. Add the chopped tomatoes and salt.
* Step 6
Add the chopped green chillies and saute till the tomatoes turn soft. Add the curd-spice mixture and mix it well.
* Step 7
Add some water and allow it to cook for 4-5 minutes. Now add the crumbled paneer.
* Step 8
Mix it gently. Add milk and again allow it to cook for 4-5 minutes. Add garam masala powder and mix it well.
* Step 9
Switch off the flame and garnish it with chopped sambar onions, coriander leaves and a dollop of butter. Amritsari Paneer Bhurji is ready to be served immediately with hot rotis.
* Step 10
Serve this delicious Amritsari Paneer Bhurji with warm, fluffy parathas or as a filling for sandwiches.
