Cooking instructions
* Step 1
Firstly, wash and steam the potatoes. Peel and mash it with a potato masher. Transfer the mashed potatoes into a large mixing bowl.
* Step 3
Transfer it to a mini food processor/chopper and pulse it coarsely.
* Step 4
To a mini food processor/chopper, add ginger, garlic, and green chilies and chop finely.
* Step 5
To the mashed potatoes, add the chopped sweet corn, onions, ginger garlic green chili.
* Step 6
Next add red chili powder, Kashmiri red chili powder, roasted cumin powder, and salt. Then add the chopped coriander leaves and the rinsed poha.
* Step 7
Mix until well combined. Form the mixture into cutlet shapes or by using wooden skewers.
* Step 8
Heat oil in a nonstick pan. Cook it on low flame on both sides until golden brown. You can deep fry or shallow fry or toast the corn cutlets. I have shallow-fried it.
* Step 10
Delicious and Crispy Corn Cutlet is ready. Serve it hot or warm with chutney and a hot cup of tea or coffee.
