Authentic Thai Red Chicken Curry

Cooking instructions

Firstly, wash the chicken and drain it well. Cut into small thin strip and set aside.

Next, to prepare the Thai gravy, in a bowl, add coconut milk.

To it, add Thai Cuisine - Red Curry Paste.

Next add the Real Thai Fish Sauce and mix until well combined. Set aside.

Wash and cut all the vegetables and keep the remaining ingredients ready.

In a kadhai, heat 3 tablespoons olive oil. Add the thin chicken strips and crushed black pepper.

Mix well and allow it to cook on low flame for about 6 to 8 minutes or until the chicken is tender. Set aside. Or else remove it in a plate or bowl and wipe the kadhai with a kitchen towel to use it further.

In another kadhai, heat 1 tablespoon of olive oil. Add the grated ginger and garlic and saute for a minute.

Add the finely chopped onions and saute till the onions are translucent. Add the thinly sliced carrot.

Add the thinly sliced red, yellow and green bell peppers. Add the sweet corn and mix well.

Cover and cook for about 2 to 3 minutes. Add the cooked chicken alongwith the liquid/gravy and mix well.

Add the prepared Thai gravy and mix well.

Add kashmiri red chilli powder and the cajun spice and mix well. Allow it to come to a boil. When it starts to boil, reduce the flame to low and cook for 5 minutes.

* Step 14

Garnish with finely chopped coriander leaves. Mix well and remove from heat.
