Cooking instructions
* Step 1
Wash the rice and soak in water for 10 minutes. Chop two tomatoes and add it to a blender and blend it into a puree. Set aside.
* Step 2
To the clay pot, add ghee and oil.
* Step 3
When the ghee is melted, add bay leaf, cardamom, cloves, cinnamon and asafoetida and saute for a minute. Next add cumin seeds and let it sizzle for few seconds.
* Step 4
Immediately add the sliced onions and saute it till light golden in color.
* Step 5
Add ginger garlic paste and saute till the raw smell leaves.
* Step 6
Now add the tomato puree and let it cook till oil appears at the surface.
* Step 7
Add kashmiri red chilli powder, coriander-cumin powder, turmeric powder and pav bhaji masala. Mix it.
* Step 9
Add the chopped tomatoes and cook only for a minute.
* Step 11
Add chopped coriander leaves and mix it.
* Step 12
Add the washed and soaked raw rice and mix it nicely so that it is coated with the masala.
* Step 13
Add hot water and mix it well.
* Step 14
When it starts boiling cover and cook on low flame for about 12-15 minutes. When done, off the flame and let it remain covered for more 6 to 8 minutes. Mix it gently with the help of a fork.
* Step 15
Super Delicious Spicy Tomato Rice is ready.
* Step 16
Serve it hot with boondi raita or any raita of your choice.
