#ga24 #Spain #WaterSpinach Water Spinach or Kalmi Saag is a green leafy vegetable and available in abundance during summer and monsoon season in Bengal.Today I am sharing a nutritious recipe ...Water Spinach Curry with Vegetables or Kolmi Saag Chorchori.It is a stir fry recipe of mixed vegetables with Water Spinach and sundried lentil dumplings. Serve this flavourful recipe as a side with rice and dal and relish !

Cooking instructions

* Step 1

Chop the leaves and soft stems of water spinach into 2 inch pieces.Wash thoroughly under running water 3-4 times to remove all dirt.Drain water in a sieve.Chop other vegetables as mentioned. Heat oil in a kadai or wok and fry the boris.Set aside.Smear salt in the peeled and cubed potatoes and fry them in medium to low flame till partially cooked. Set aside.

To the remaining oil,sprinkle paanch phoron and dry red chilli.When they sizzle, add other vegetables. Sprinkle 1/4 tsp salt and fry in low to medium flame till partially cooked. Now add the chopped water spinach or kalmi saag.

* Step 3

Add turmeric and red chilli powder. Also add ginger paste.Add salt and sugar to taste.Mix well and saute for few minutes. When water starts releasing from saag add the fried lentil dumplings / bori.Cover and cook till all vegetables are done.No need to add water.If at all needed sprinkle 1 or 2 tbsp water.

Remove cover and stir till all water dries up.Garnish with the fried dry red chilli. Serve as a side with dal and steamed rice.
