Reshmi Egg Malai is a flavourful spicy Egg Curry cooked in a creamy gravy.This unique Egg Curry can be served as a side dish with jeera rice, tandoori roti, butter naan or any Indian flatbread .

Cooking instructions
* Step 1
Boil, peel and prick eggs with a fork. Smear 1/4 th tsp salt.Heat 2 tbsp oil in a pan and lightly fry the eggs till golden brown on all sides.Set aside.
To make the Reshmi Malai Paste: In the remaining oil, lightly fry the onions till translucent.Add green chillies and cashewnuts and saute over medium heat. Set aside to cool.
* Step 2
Blend the curd and malai to a smooth paste.Set aside.Grind to a smooth paste the fried onions,cashewnuts,chopped coriander,green chillies, along with ginger garlic paste and 2-3 tbsp water.Set aside.
* Step 3
To make a silky smooth Reshmi Malai gravy :
Add 3 tbsp more oil. Heat it and sprinkle half crushed whole garam masala and peppercorns. When they splutter, add bay leaf, the prepared onion and ginger garlic paste and fry till oil leaves sides of pan.Add turmeric and red chilli powder,Korma Masala,salt to taste and crushed kasoori methi. Add the blended curd and malai paste and garam masala and fry stirring frequently so that masala doesn't stick underneath.
* Step 4
Add the eggs and toss in the masala till well mixed.Add 1 cup warm water and cook for 4-5 minutes till you get a silky smooth and thick gravy. Add 2 slit green chillies and chopped coriander.Sprinkle 1 tsp ghee and half tsp red chilli flakes and toss.Serve hot as a side dish with jeera rice, tandoori roti, butter naan or any Indian flatbread.
