Chicken Ghee Roast

#ga24 #DadraAndNagarHaveli #chicken Chicken Ghee Roast is a popular Mangalorean Chicken recipe originating from the Town of Kundapur.It is fiery red in colour and the heat has a smoky sweetness along with a tangy and spicy flavor mixed with ghee and roasted spices.However store bought Ghee Roast Masala Curry Paste may also be used and along with few other roasted spices, it tastes delicious. Tender chicken pieces are marinated and cooked in spicy Ghee Roast Masala Curry Paste. It is a semi dry preparation. Serve this with steamed rice, jeera rice, roti or neer dosa and relish.

Cooking instructions

* Step 1

Clean and wash the chicken pieces. Drain water and marinate chicken with curd, 1 tbsp ghee,ginger garlic paste, turmeric, and Kashmiri Red Chilli Powder. Add 1/2 tsp salt and lemon juice.Mix well, cover and set aside for 1 hour. To make Ghee Roast Masala: Heat a pan, add coriander and cumin seeds,fennel and fenugreek seeds, dry red chillies.Roast in medium heat for 5 minutes till aromatic.Cool and grind to a fine powder.Add ginger garlic and tamarind paste with water.Grind to a smooth paste.

Heat ghee in a pan and add chopped onions.Fry on medium heat for 5 minutes till translucent. Add homemade ghee roast masala paste or optionally store bought Ghee Roast Masala,,ginger garlic paste and fry for 2 minutes. Add the marinated chicken and fry on high heat for 5 minutes.Add 1 cup water, sugar or jaggery, salt to taste and cook on low flame covered for 15 minutes till moisture dries up and evenly roasted.Add curry leaves and 1 tsp more ghee.Toss to mix well.

Add a dash of freshness to the dish with some chopped coriander sprinkled on top as a garnish and serve hot with plain or jeera rice, roti or neer dosa in lunch or dinner.
