Lauki with Prawns / Lau Chingri

Bottle Gourd ( Lauki)cooked with Prawns ( chingri)is a popular and traditional Bengali dish.Cooked without onion or garlic, this is a healthy dish when you want a meal to be light after a heavy and spicy dinner.So some prawns are used to cook a most delicious and light curry with lauki.This recipe is slow cooked ,has minimal spices and can be eaten as a side with rice, dal and jhuri aloo bhaja (grated golden fried crunchy potatoes) in lunch or dinner.

Cooking instructions
* Step 1
Peel and chop lauki into 1/2 inch sticks.Wash and drain water.
* Step 2
Smear pinch of salt and turmeric to some prawns.Heat 2 tsp oil in a pan and lightly fry them.Set aside.Add 1 tbsp more oil and heat it.Sprinkle tempering.When they splutter, add bottle gourd (lauki).Add turmeric,red chilli powder and cumin powder.Also add bay leaf,salt and sugar to taste.Cook under low to medium flame.Add the lightly tossed prawns.
* Step 3
By now bottle gourd will start releasing water.If needed add 1/4 th cup water.Cook till lauki and prawns are cooked and it turns into a dry mishmash curry.Sprinkle chopped coriander and toss to mix well.Serve a delicious traditional Bengali delicacy, Lauki curry with prawns (Lau Chingri) as a side dish with rice, dal and jhuri aloo bhaja (grated golden fried crunchy potatoes) in lunch or dinner.
