Aloo Posto or Potatoes in Poppy Seed Paste is a classic example of how the simplest ingredients in your pantry can yeild a creamy spiced potato dish.This is an innovative twist to the regular Bengali traditional recipe of Aloo Posto which is normally made with white poppy seeds. There was a bottle of black poppy seeds in my pantry.So ground some amount of black poppy seeds along with some white sesame seeds and green chillies.Added this paste to the frying potatoes and onion and the result was amazing !The addition of mustard oil in this recipe brings out a lovely pungent flavour to this dish.So why not give it a try ?Serve Aloo Posto as a side with steamed rice and dal and relish 😋 .

* Step 1
Step-1 : Making the poppy seed paste :
Soak the poppy seeds and sesame seeds in a bowl for about 30 minutes.Optionally dry grind, then add water and grind to a smooth and thick paste along with 2 green chillies.
Step-2 : Preparing the ingredients :
Parboil the diced potatoes with 1/4 th tsp salt.Drain and set aside.Chop the onion finely.

Step -3 : Frying the spices:
Heat mustard oil in a wok or pan.Wlhen it is fuming hot, add the parboiled potatoes smearing little salt.Fry till golden brown. Set aside.In the remaining oil, sprinkle onion seeds (kalonji). When they crackle, add the chopped onion.Fry till translucent. Add the potatoes and chopped red and green chillies and toss to mix well.
* Step 3
Keep stirring. Add turmeric powder,and poppy seed paste.Add salt and sugar to taste and toss till oil leaves sides.Add a cup of water and boil till potatoes are fully cooked.The gravy should coat the potatoes. Sprinkle chopped coriander and mix well.
* Step 4
Drizzle 1 tsp mustard oil before serving.Serve hot as a side with steamed rice and dal in lunch or dinner.
