Ridge Gourd and Potato Curry in Sesame Coconut Paste

#NDS Ridge Gourd ( Jhinge) is a seasonal vegetable widely cultivated in India. It has many health benefits due to its high water content and soothes our taste buds and digestive system. It can be cooked in various ways but the culture of combining coconut and sesame or poppy seeds paste is a traditional recipe in East Bengal cuisine.This delicious dish is best relished with steamed rice in lunch or dinner.However it can be served with hot phulkas as well. During Navratri and Dussehra it pairs well with samak rice pulao,rajgira or buckwheat flour roti or paratha.

Cooking instructions

* Step 1

Remove the skin of ridge gourd, but partially reserving some of it.This vegetable is very soft and tends to become mushy if all skin is removed.Cut into semi-circular medium thick pieces.Peel and chop potato into small cubes.Scrape or grind coconut pieces to a coarse paste in a mixer grinder.Soak sesame or poppy seeds in warm water for 15 minutes and grind to a smooth paste along with 1 green chilli.Set aside.

Parboil potato upto 1 whistle in a pressure cooker.Release steam after 2 minutes.Heat oil in a wok or pan.Sprinkle paanch phoron(five spice).When they splutter, add the potato and stir fry till light golden.Add ridge gourd and stir fry for 3-4 minutes.At this point ridge gourd starts releasing water.Add turmeric and red chilli powder.Also add salt and sugar to taste and fry.

* Step 3

Add 1/4 th cup water and cook till ridge gourd and potato is cooked.Add the coconut, sesame seed paste and continue stirring till coconut is fried nicely and releases aroma.The vegetables should get mixed with the masala and become dry.

* Step 4

Sprinkle 1 tsp ghee and serve delicious Ridge Gourd and Potato Curry in Sesame Coconut Paste/ Til Jhinge Aloo Narkol Sabzi with steamed rice or hot phulkas. Also during Navratri or any other vrat with samak rice pulao, buckwheat or rajgira flour roti or paratha in lunch or dinner.
