Achari Bhindi

#AR Achari Bhindi is a quick recipe with an unique taste. The name of the dish is derived from the word 'achar' which means pickle. So this recipe has a pickle-like flavor. Okra or Bhindi is cooked in a tangy tamarind and tomato based sauce, tossed with Achari or Pickle Spices and cooked with mustard oil which adds a pungent flavor to this dish.This Achari Bhindi is a perfect summertime meal recipe.Serve this sabzi with chapati,paratha or rice in lunch or dinner.

Cooking instructions

* Step 1

Chop the head and tail of bhindi or okra.Cut into 1 inch pieces and pat dry.Soak dry masalas in 3 tbsp warm water for 10 mimutes.Blend to a smooth paste of it alongwith 1 dry red chilli and some more water if needed.

* Step 2

Heat 2 tbsp mustard oil in a pan.Smear salt in bhindi and fry them in low to medium flame till nearly done.Set aside.Add 1 tbsp more oil and sprinkle hing (asafoetida).Add the masala paste, salt and sugar to taste,turmeric, red chilli powder,tamarind paste and tomato puree.Fry and add 1/4 th cup water and boil to eliminate raw flavor of masala.Add bhindi when masala is almost dry.

* Step 3

Toss till masala coats bhindi.Fry 1 dry red chilli and pour the tadka alongwith the chilli oil over the cooked pickled or achari bhindi.
