Singaporean Rice with Noodles

Singaporean Rice with Noodles is a fusion of Indo Chinese cuisine. Although the name maybe misleading, it is basically a combination of two different recipes from Indian and Chinese cuisine. Rice and stirred noodles topped with vegetables,eggs,prawns or chicken and sauces is a delicacy as there is a burst of flavour in every single bite and tastes delicious.

Cooking instructions
* Step 1
Boil the rice with 1tsp salt till 80 % cooked. Drain water and spread on a plate to cool.Boil noodles drain and set aside.Heat 1 tsp oil in a pan.Whisk the eggs with pinch of salt and black pepper.Scramble the eggs and set aside.Heat 2 tbsp oil in a wok.Sprinkle minced garlic and grated ginger.Saute till light brown and aromatic. Add chopped onion and saute till translucent.Add chopped vegetables,chilli flakes,salt to taste,vinegar,soy sauce,chilli sauce and tomato sauce.Stir fry.
* Step 2
Add scrambled egg and toss. Heat 1 tbsp oil in another wok.Take red chilli powder in a bowl.Pour the heated oil over red chilli powder to make chilli oil. Add boiled noodles to the sautéed vegetables and toss. Add the rice alongwith curry powder,soy sauce and chilli sauce.Mix all to combine well.
* Step 3
Transfer Singaporean Rice with Noodles on a serving dish and garnish with green and red chillies.Drizzle some chilli oil on top and serve hot.
