Methi Chicken Malai

#WDC Methi Chicken Malai is a rich creamy Mughlai dish prepared with chicken ,fresh methi ( fenugreek) leaves with an added punch of kasoori methi.It has a smooth silky texture as the dish is simmered in a rich nutty creamy gravy.Fresh methi leaves make the dish flavourful. The dish is cooked with fresh cream and the aroma of the cooked recipe is mesmerizing. This dish is prepared on special occasions for a special person or at parties. Pair it with tandoori roti or any Indian flatbread and enjoy a special dinner with your loved one. I dedicate this authentic Methi Chicken Malai on Women's Day to the light of my life...my daughter who is also an expert cook .She stays abroad and balances home and worklife with equal skill.The tradition of cooking good food runs in our family.My daughter has picked up the tradition too.She is a daughter who deeply cares for her parents. She is a friend to me and an expert at multitasking.....a position that is not bound within the walls of her home but one that can reach the hall of fame. Women deserve to be celebrated all the year round.The power they hold is enormous. The day is only a reminder to acknowledge the role of a woman in our society and to love and admire their worth.Happy Women's Day to all the lovely mothers,sisters ,daughters and friends.

Cooking instructions

* Step 1

Pluck methi leaves from the stems and chop them.Wash and strain water completely.Meanwhile marinate chicken for an hour with 1/4 th tsp salt,black pepper,ginger garlic paste and curd.Boil chopped onion with cashewnuts and green chillies.

* Step 2

Cool and make a paste of it alongwith green chillies and thick cream.Shake off extra marinade from chicken reserving it for use later.Heat oil in a non-stick pan and fry the chicken till golden brown.In the remaining oil,add 1 tsp ghee.Sprinkle half crushed whole garam masala,cumin seeds and saute methi leaves with pinch of salt for few minutes.

* Step 3

Add the ground paste,coriander powder,rest of the marinade,black pepper powder and crushed kasoori methi.Add the chicken and fry till oil leaves sides.Add a cup of water.Boil in medium flame covered, till chicken in fully cooked.Toss in-between so that gravy doesn't stick underneath.

* Step 4

Sprinkle garam masala, chopped green chillies and toss.Garnish with chopped coriander,1 tsp malai or thick cream and slit red chilli.Serve hot with roti,paratha,or any Indian flatbread to the most loved special person in dinner or at parties.
