In Indian cuisine, chutney is an important condiment that is mostly served with every meal. Tomato Capsicum Onion Chutney is a unique combination that makes it extremely flavourful and nutritious. The sweet and spicy taste of capsicum when blended along with tomato, ginger, garlic, and onion gives a rich silky texture to this authentic chutney. Serve this healthy and tangy condiment with idli, dosa, roti, paratha, even with bread or with rice and dal, and also with snacks.

Cooking instructions
* Step 1
Cube onion, tomato, and capsicum. Heat 1 tbsp oil in a pan. Sprinkle 1/2 tsp each of mustard and cumin seeds,2 dry red chilies, thing, and split urad dal. When they sizzle, add few curry leaves and fry. Add cubed vegetables. Also add green chili, garlic, and sliced ginger. Sprinkle salt and stir fry till lightly roasted and tomatoes are soft.
* Step 2
Add 1 tsp tamarind paste and toss. Cool and blend in a blender.Heat 1 tsp oil. Sprinkle 1/2 tsp each of cumin and mustard seeds and few curry leaves. When they sizzle, pour it over the chutney and serve with idli, dosa, even with any flatbread or as an accompaniment with dal and rice. The chutney has a shelf life of 4-5 days if stored in a bottle and refrigerated.
