Shorshe Bhindi or Okra in Mustard Paste

Shorshe Bhindi is a traditional Bengali recipe and best enjoyed with steamed rice.The sharp taste of mustard characterizes this recipe which is mellowed by adding curd and tastes delicious.

Cooking instructions
* Step 1
Wash and pat dry bhindi. Cut into 1.5 inch pieces.Meanwhile soak mustard with warm water for 10 minutes.Grind to a smooth paste alongwith curd and 1 green chilli.
* Step 2
Heat 1.5 tbsp oil in a wok and sprinkle fenugreek seeds.When they sizzle,add the bhindi.Sprinkle little salt and fry in low flame till half cooked.Add the mustard paste with curd,turmeric,red chilli powder,salt and pinch of sugar to taste.Sprinkle little water if needed and cook covered in low flame till cooked and there is a semi dry gravy left. Drizzle one teaspoon mustard oil and toss.Garnish with 1 slit red chilli and serve hot with rice.
