Roasted Peanuts with Garlic and Mixed Herbs

Roasted Peanuts, a nutrient rich flavourful snack can be prepared with few ingredients.It takes only 3 minutes to roast, another 2 minutes to assemble and toss garlic and mixed herbs which makes this delightful crunchy snack all the more flavourful.This can be stored in airtight container for a week.Chopped onion,green chillies and coriander may be added during serving or enjoy as it is as an accompaniment with drinks or a cup of tea.

Cooking instructions
* Step 1
Place peanuts in a micro safe bowl and microwave high power for 3 minutes tossing after every 1 minute. Allow peanuts to remain in the microwave for 10 minutes. Peanuts will get fully roasted in its own heat.
* Step 2
After roasting the skin will peel off easily from peanuts by rubbing them.Split then into half.Smear lemon juice in peanuts.Heat 1 tsp oil in a non-stick pan.Fry finely minced garlic till light brown and almost dry.Add chopped green chillies and toss till fried.Add mixed herbs and toss.
* Step 3
Now add the roasted peanuts,chaat masala,black salt and black pepper.Toss all and transfer again to a microsafe bowl.Microwave for 1 minute.Garnish with chopped coriander while serving.
* Step 4
Serve warm roasted spicy garlic herbed peanuts with drinks or with a cup of tea.
