Patishapta is a traditional Bengali pancake roll and a popular pithe which are mainly made during Makar Sankranti.The stuffing however varies from coconut to kheer.An unique twist is given to this light crepe which are filled with carrot halwa/pudding and is served as a roll.
Cooking instructions
* Step 1
Soak maida and rava with 1 tbsp rice flour and milk. Add water and whisk thoroughly so that no lumps are there.Add sugar and crushed cardamom powder to the batter and set aside covered for 15 minutes.
* Step 2
Grate carrot.Heat ghee in a wok.Add carrot and sugar and fry.Make a paste of powder milk or add grated khowa and toss till dry.Add raisins and chopped cashewnuts.Chopped almonds and pistachio may also be added but optional.Sprinkle crushed cardamom and mix well.Set aside.
* Step 3
Heat a nonstick griddle and drizzle oil.Pour a ladle full of batter and spread into a circular disc.Fry on low flame. Add 1 tbsp of carrot halwa in the crepe and roll it.Serve with grated carrot or kheer.
