Adding protein packed shredded chicken with sautéed garlic, onion and tomatoes makes a complete meal in a bowl.Adding chicken or any meat is optional.

* Step 1
Heat butter in a pan.Fry minced garlic and add chopped onion.Fry till transparent.Add chopped carrots,beans, chopped bell peppers and cook until just softened.Add salt to taste,ground black pepper,boiled chicken,chicken or vegetable broth and grated cheese.Add tomato puree and Italian seasoning.
* Step 2
Boil and add shredded cabbage,chopped spring onions and green peas.Add pasta and simmer till tender.Sprinkle grated cheese over each bowl of soup and serve steaming hot bowl of Chicken Minestrone Soup in breakfast,lunch or dinner.Toasted bread or crackers may be served with it.
