Bajara Mutton is a delicious and aromatic dish which has very simple ingredients but tastes delicious.As the name suggests, Banjara means gypsies.Hence this is a curry which can be made quickly in a rustic style. Onions fried and ground to a paste gives an extra kick to this rich and delicious gravy.This curry is best enjoyed with soft roomali roti,phulkas or steamed rice.
Cooking instructions
* Step 1
Marinate mutton with 2 tbsp mustard oil,2 tbsp curd,tomato puree, ginger garlic paste,turmeric and red chilli powder and coriander powder.Heat oil in a non-stick wok and fry finely sliced onions till crispy brown.Reserve some fried onion and grind to a paste rest of the fried onion,charmagaz (melon seeds) with 1 tbsp curd.Cut potatoes into half. Sprinkle half crushed whole garam masala and fry the potatoes in medium flame.Set aside.
* Step 2
Dry roast cumin,red chillies,bay leaves,whole garam masalas,and grind them.Store in airtight container.
* Step 3
Remove excess oil and keep 1 tbsp oil and add 1 tbsp ghee to a pressure cooker.Add the marinated mutton, Kitchen King Masala, and fried onion paste.Also add the fried whole garam masala and fried potatoes. Fry till oil leaves sides.Add 2 cups warm water,bay leaf and pressure cook 5-6 whistles or till mutton is soft.Allow the steam to release by itself.Open lid after sometime.
* Step 4
Add 1 tsp dry roasted and ground garam masala powder and give it a boil.Garnish with rest of fried onions, chopped coriander and serve with roomali roti, phulkas or steamed rice.
