Elo jhelo or Champakali nimki is a traditional Bengali crunchy sweet snack specially made during Bijoya Dashami and Diwali.The process of making it is a bit tricky but not very difficult to make.This sweet delicacy is not only crunchy and delicious but can be stored for long in airtight containers.
Cooking instructions
* Step 1
Mix ghee and refined oil,also pinch of salt to the flour.Add baking powder and mix all.Add water and knead to a tight dough.Keep covered for 30 minutes.Make lemon sized balls and roll into round purees.Makes about 10 purees.Make slits on the rolled puri.Roll these slits and twist both edges.
* Step 2
Heat oil in a pan and fry elo jhelo in medium to low heat till they are crispy golden brown.Drain fried elo jhelo on kitchen towel and set aside to cool.Prepare sugar syrup by boiling sugar and water till 2 string consistency.
* Step 3
Check the stickiness of syrup between forefinger and thumb. When it looks like 2 strings the syrup is ready.Let it cool and rest for 10 minutes.Then dip each elo jhelo in this sugar syrup.Spread on a plate for the syrup to settle on these crispy fried sweet snack.Store in airtight container when completely cool and serve whenever needed as a dessert or craving for something sweet.
