Sweet sour and chatpata mango slice.

Cooking instructions

* Step 1

Peel and slice mangoes lengthwise approx 8 pieces.Smear little haldi and salt and keep in direct sunlight for 3 to 4 hours.Discard the water if any after that.

* Step 2

Pour the sugar and vinegar in a wok.Add the chopped dry red chillies,ginger and garlic and bring to boil.Add the mangoes after sometime.Care should be taken so that mangoes don't become mushy.It should retain it's shape.Adjust sugar according to sourness of mangoes.Add red chilli powder, garlic paste, pinch of salt.Cook till the syrup reaches 1 string consistency and mangoes just soft.Add sodium benzoate.Toss and set aside to cool.Sprinkle raisins when it's cool.Bottle and refrigerate.
