Cooking instructions

* Step 1

Mix besan and sooji in a bowl.Add baking powder,pinch of salt and sugar, 1 1/2 tbsp refined oil.Gradually add water to get a thick consistency.Add lemon juice and ginger paste.Beat thoroughly so that there are no lumps in it.

* Step 2

Grease a microsafe glass container with oil.Now add Eno to the batter and transfer immediately to the greased glass container.

* Step 3

Microwave high power 2 mins.Check if done by pricking with a knife.Sprinkle 11/2 tbsp sugar solution to keep it soft.

* Step 4

Heat 1 tbsp oil and add hing and mustard seeds.When they splutter, fry the curry leaves and toss the green chillies.Pour over the dhokla.

* Step 5

Sprinkle coconut and some coriander leaves.Cut into squares and serve with hot and sweet tamarind chutney.
