Grilled Chicken with Artichokes and Olives
Simple to make, pantry ingredients, bold flavor. A dinner that sets it apart from boring!

Cooking instructions
* Step 1
Prepare your ingredients.
* Step 2
Grill chicken. I butterflied my boneless, skinless chicken breasts. Season chicken with salt and pepper before grilling.
* Step 3
Saute garlic and pepper flakes in oil over low heat until garlic becomes fragrant.
* Step 4
Add artichokes and olives. Saute a few minutes to heat them through.
* Step 5
Add rest of ingredients. Cook until scallions are just turning tender.
* Step 6
Spoon over grilled chicken.
* Step 7
A nice accompaniment to this would be angel hair pasta with a simple tossing of extra virgin olive oil.
