Phodni chi Poli | Leftover Roti Poha

Phodni chi Poli is a Maharashtrian leftover makeover dish made with roti or poli as we call it in Marathi. It a fuss-free & quick breakfast option. 🙂
Wholesome, delicious and healthy & my favourite option when I have a couple of rotis leftover from the previous day :))
Ingredient

Cooking instructions
* Step 1
Coarsely tear the leftover Rotis with your fingers into small pieces. Alternatively, you can whiz it in the mixer to get a coarse mix.
* Step 2
Lightly dampen the torn, crushed roti mix with a few drops of water. Add salt to taste & the sugar. Set aside.
* Step 3
In a kadhai, heat the oil, give a tadka of mustard seeds, asafoetida, peanuts, green chillies & curry leaves. Add the turmeric & red chilli powder, mix in
* Step 4
Add the onions, saute until translucent. Add the tomatoes, cook until soft.
* Step 5
Add the ready roti mix, adjust salt seasoning. Toss the mixture for 2 mins, take off heat
* Step 6
Top with fresh lime juice & fresh coriander, serve hot with a cup of chai. Enjoy ☺️
