Winter Salad

This is a favourite side dish to go with a soup and toast dinner on chilli winter nights. Tip : You can use fresh baby spinach leaves instead of the lettuce and add lightly steamed broccoli or beets too.

Ingredient

Food ration :

2-4 servings

Cooking time :

3-4 mins
250 gms

Lettuce

1/2 tsp

Soya Sauce

1/4 tsp

Sugar

1 tbsp

Lemon Juice

to taste

Salt

Cooking instructions

* Step 1

Wash and roughly tear of the lettuce leaves. Dip into a bowlful of ice cold water, set aside.

* Step 2

Wash, wipe and halve the button mushrooms.

* Step 3

Wash, peel and cube the carrots

* Step 4

Lightly steam the mushrooms and the carrots in the microwave for 2-3 mins. Set aside

* Step 5

Wash, peel (optional) and dice the apples, set aside.

* Step 6

Cube the cottage cheese pieces, set aside.

* Step 7

Lightly toast the sesame seeds on a nonstick pan until golden brown and crisp. Set aside.

* Step 8

To make the dressing : Mix together the oil, lemon juice, sugar, soya sauce, pepper powder & the salt.

* Step 9

To assemble the salad, drain the lettuce leaves, lay them out in a serving platter. Sprinkle some of the dressing on top.

* Step 10

Take the cottage cheese, apple, the steamed carrots & the mushrooms in a large mixing bowl. Toss in the dressing, gently mix.

* Step 11

Lay these over the bed of lettuce

* Step 12

Sprinkle the toasted sesame, gently toss. Serve immediately.
