Vegetable Soba (Japanese style noodles)
This is one of the favorite recipes of my 3 year old son. I hope you will enjoy it too. I add lots of different vegetables in this recipe, you can mix and match which ever you like or whatever is available. Enjoy vegetable soba.
Cooking instructions
* Step 1
Thinly slice Onion, bell pepper, lotus root, carrot and mushrooms. You can use any vegetable of your choice !!
* Step 2
Saute them one by one in very little oil. Keep them aside.
* Step 3
Grind Tomato and garlic together. In a large pan add 1 tsp oil. To this add tomato paste, mirin, soy sauce, salt and chili. Mix till tomatoes are cooked. Add water if tomato sticks to bottom. Add soba, little water and mix well.
* Step 4
Add cooked vegetables and mix well. Keep pan on high flame for few seconds then switch off.
