Koshimbir - Indian cucumber salad
This dish is a mix of crunchy cucumber, tang from lemon juice, spicy green chili and to top it all aroma of roasted peanuts and its rich nutty taste. You can eat it as a side dish or have it as light healthy lunch/dinner.
Cooking instructions
* Step 1
Peel and finely chop cucumbers using a chopper or with knife. I used a chopper, its very fast and handy.
* Step 2
Roughly grind dry roasted peanuts. Finely chop green chili. Mix both with cucumber, add lemon juice and salt as per taste.
* Step 3
Chop garlic. In a small pan heat oil, add mustard seeds. When seeds have popped add chopped garlic and remove from heat. Pour it over cucumber mix.
* Step 4
Garnish it with chopped or shredded coriander leaves.
