Finger millet (Ragi/ Nachani) porridge
Finger millet is a wonder grain and power house of nutrients. It has a high calcium and Iron content and it is Gluten free. That makes it suitable for GFCF diet as well. I introduced it my son when he was 6 months old, this is his favorite breakfast.
I prep a big batch of finger millet flour and use it as and when needed.
Cooking instructions
* Step 1
Melt Ghee/ butter in a pan and add millet flour to it. Stir continuously do not let it stick to pan or burn. Roast till it turns brown in color and ghee/butter starts to separate from edges.
* Step 2
Let it cool and store in air tight dry jar.
* Step 3
For Sweet : Take 2-3 heaped tsp of roasted finger millet flour add jaggery or palm sugar or coconut sugar as per taste. If you don't want to use sugar skip it, after cooking you can use honey or maple syrup as per taste.
* Step 4
Add 1 cup of hot water and cook on slow.
* Step 5
Stir continuously make sure there are no lumps.
* Step 6
For Savory : Take 2-3 heaped tsp of roasted finger millet flour add salt,cumin powder, pepper and crushed garlic.
* Step 7
Add 1 cup of hot water and cook on slow. Stir continuously make sure there are no lumps.
