Khao Pad Goong (Thai Prawn Fried Rice)

#cppassport #cppthailand - This is an amazingly simple and an equally yummy Thai style Prawn Fried Rice. It is a very popular street food, enjoyed by the local folk. Very few ingredients goes into preparing this delectable one pot meal. This is a very quick and an easy recipe that can be dished out in a jiffy when you want something wholesome and satisfying.

Cooking instructions

* Step 1

Heat oil in a wok / pan and sauté the garlic and chilies for a minute. Then add the onion and continue to sauté for 1-2 minutes.

Now add the prawns and stir fry for a minute. Shift everything to one side of the pan and scramble an egg on the other side.

* Step 3

Then mix everything together and add the rice, pinch of salt and soya sauce. Give it a mix and stir fry for 2 minutes on high flame.

* Step 4

When done, switch off the flame and garnish with coriander leaves. Serve, accompanied with sliced cucumber, tomato and lime.
