This rice is so easy and delicious lots of layers of flavours from ginger and hot chilli, fish sauce. To name just a few🌶 I’ve topped it off with basil 🌿 this variety is Greek basil, of course if you can get Thai basil use it!

Ingredient

500 grams

precooked rice

2 tbsp

oil

1 tbsp

fish sauce

Handful

fresh basil

Cooking instructions

* Step 1

Prepare the veggies, peel the carrot l, chop up the garlic and spring onion.

* Step 2

Dice the chilli too!

* Step 3

Put the oil in a wok or frying pan on a medium to high heat! Throw in the onion, ginger,m and garlic. Fry it for a minute or two then add the carrot.

Add the rice give it a good stir!

Add the fish sauce, then the soy sauce, stir well coating all the grains well!

Add the juice of the lime! Top with basil leaves and stir!

Make sure it’s heated throughout, and serve!

Ingredient

1-1/2 Tablespoon

Soy Sauce

1-1/2 Tablespoon

Worcestershire Sauce

1-1/2 Tablespoon

Oyster Sauce

1 Tablespoon

Chilli flakes

1 teaspoon

Chinese Salt

1-1/2 Tablespoon

Vinegar or lemon juice

2 Tablespoon

Chilli Sauce

1 teaspoon

Black Pepper

2 Tablespoon

Chilli Garlic Sauce

1 teaspoon

Sesame Oil

1 teaspoon

Oregano

1/2 teaspoon

Thyme

to taste

Salt

Cooking instructions

* Step 1

Place Tomatoes, onions, bulb of garlic and green chilies on a greased tray. Bake them in preheated oven at 220 degrees for 15 minutes

* Step 2

Allow it to cool. Take off skin of tomatoes, garlic and green chilies if possible. Blend all these together to form a paste For boiling pasta, take water in a big pan with all ingredients mentioned in boiling pasta. When it becomes to boil, add your spaghetti or pasta. Cook till it is still stiff. (It should not be soft)

* Step 3

Strain in strainer and immediately cold water over it so that they are well separated

* Step 4

Heat oil in the same pan and fry strained spaghetti a little and keep them a side.

* Step 5

Heat oil in a pan and add marinated chicken to it. Cook over high heat till it is about to dry.

* Step 6

Add carrots to it and add prepared sauce over it

* Step 7

Cook over high heat till thick for three to four minutes. Add all spices mentioned in Ingredients for "Other Spices" section Add Prepared spaghetti and other vegetables to it. and toss a little

Sardinian tomato fregola stew

Fregola is a typical Sardinian pasta, made from durum wheat. It's a bit like giant couscous. After lots of food research into Sardinia recently, I by chance came across a pack of the fregola in a nearby deli in London. This tastes even better the next day.

Ingredient

2-3 cloves

garlic, crushed

400 ml

veg stock

Cooking instructions

* Step 1

Heat a splash of olive oil in a large saucepan, then add the pancetta and fry for a few minutes.

* Step 2

Add the onion, carrot, celery and garlic and cook gently until softened, stirring occasionally so the garlic doesn't burn.

* Step 3

Add the chickpeas, tomatoes and stock, season with salt and pepper, and bring to the boil.

* Step 4

Add the fregola pasta, then cook over a medium-low heat until the pasta is cooked, about 15 minutes or so (don't worry, you can't overcook it like regular pasta). You'll find the fregola may stick to the bottom of the pan, so stir often. Add a splash of hot water if it looks a little dry.

* Step 5

Towards the end of the cooking time, stir in the parsley. You may want to add peas or any green leaves, like spinach if you have them (optional)

* Step 6

Once cooked, season to taste and serve with grated cheese if you like.

I threw this coleslaw together with a bunch of leftover veg, to accompany a chicken burger. It uses the outer leaves of a Savoy cabbage (#cookeverypart) and I added some jalapeños for an extra kick ! Yum!

Super finely slice all of the veg, including the jalapeños and mix together with all of the other ingredients. Done!

A colourful salad that has everything that you need in a meal. You can boil some eggs or eat it with grilled chicken breast for a more filling version. #mycookbook #vegetarian #vegan

Ingredient

Stalk

rosemary

quinoa

1 stalk

celery

* Step 1

In a bowl, put the onion, butternut squash, sweet potatoes and courgette. Sprinkle some white pepper, turmeric, salt, garam masala and vegetable oil. Mix it really well and then place it in a baking tray, add the rosemary stalk on top and cook it in the oven for 20 minutes at 150 degrees Celsius.

In a pan, cook the quinoa in two cups of water. Add a pinch of salt and half stalk of celery. It takes around 10 minutes to cook completely. Once it's ready, drain and rinse it under the tap. Place into a colander to remove the excess of water. Chop the celery and add it to the bowl.

* Step 3

On the same bowl, add the carrots, the other half of the celery stalk finely chopped, the cucumber, the quinoa and the beans.

Remove the vegetables from the oven and let them cool down as much as possible.

Once they are cold, add them to the bowl and mix. Add the juice of 2 lemons/ limes, chopped coriander, chopped spring onions, olive oil, salt and mustard seeds. Mix it all together and enjoy!
