One of the best things I've ever made! I could not eat it silently! I was just going oooooh and aaaaaah and mmmmm!

Ingredient

1 clove

local garlic

1 tablespoon

Peptang Choma Sauce

1 tablespoon

KOL tomato sauce

1/2 teaspoon

black pepper

1 tablespoon

Blueband

Cooking instructions

* Step 1

Make sure your potatoes are very clean as we are not peeling them. Cut into large chips shape, deep fry, and drain.

* Step 2

Chop the spring onions and garlic very finely and fry them in the Blueband for around a minute.

* Step 3

Add the curry powder and black pepper and let them cook until releasing their aroma, around a minute.

* Step 4

Add the sauces with a little water and stir until very thick.

* Step 5

Add in the chips and toss until well coated.

* Step 6

Do not add salt until you taste. The sauces have a lot of salt.

* Step 7

Serve hot.

I wanted to do a twist on the classic mbaazi wa nazi na mahamri by making a mbaazi dip for the mahamri instead. Delicious!

Ingredient

2 bunches

spring onions

2 tablespoons

Blueband

1/2 teaspoon

black pepper

3 tablespoons

Peptang Choma Sauce

Cooking instructions

* Step 1

Caramelize the red onions in the blueband

* Step 2

Add the mbaazi, tomatoes, spices, salt, and choma sauce and let cook for 30 minutes with a little water.

* Step 3

When cooked, let cool and blend with the spring onions.

* Step 4

Return to heat and cook until very thick. Add the milk when almost ready and cook for a short time.

* Step 5

Serve with mahamri, mandazi or doughnuts for dipping.

You know that loaf of bread that stayed too long at the shop until it lost 'something'? It's not mouldy, but kind of dry and unpleasant to eat? Well, I had one of those stale loaves so I decided to create a full meal from it, French toast, but why not try it savory instead of sweet? And it doesn't strictly have to have only eggs, does it? The long and short of it is that they are so delicious that I am having trouble saving some for tomorrow! (It was nearly a whole loaf!)

Ingredient

Cooking instructions

* Step 1

Grind the eggs, beans, garlic, spring onions, curry powder, salt, and chili sauce (optional) in the blender. Do not add any other liquid.

* Step 2

Heat the garlic oil in a pan, coat individual slices of bread in the blended egg mixture, and fry thoroughly on both sides until well browned.

* Step 3

Eat as is or prepare sandwiches with them. Extremely delicious!

I've been really enjoying experimenting with the wonderful world of chillies and making food as hot as possible while at the same time elevating its overall qualities, especially taste. I have to say I'm pretty proud of this particular experiment! Very hot, but not enough to make it unpalatable, but at the same time super sweet and delicious! I had it with ugali.

Ingredient

1 teaspoon

dried mint

1/4 cup

cooking oil

Cooking instructions

* Step 1

Blend all ingredients except beans, oil, coconut, onions, and chillies.

* Step 2

Caramelise the onions with the chillies in the oil, add curry powder and coconut and allow to toast for a few seconds, then add the blended mixture and cook for ten minutes and blend again until very smooth.

* Step 3

Sieve the sauce, lighten it with some water, then return to heat with the beans and simmer until very thick.

* Step 4

Correct seasoning and, if too acidic, add some sugar.

* Step 5

Remove from heat and let rest a bit before serving i.e. serve warm not hot. Perfect with ugali.

I had some cold viazi karai that I bought and no microwave, so I got a brainwave, a delicious one!

Ingredient

1 tablespoon

Blueband margarine

1/2 cup

milk

1 teaspoon

cumin powder

1 teaspoon

black pepper

Cooking instructions

* Step 1

Fry the parsley, onion, and celery in the Blueband.

* Step 2

Add the spices and mix, then add the potatoes. Cut them if they are large.

* Step 3

Stir fry them a bit, then add the milk and stock, check seasoning, and heat through.
