So that's a bean ball smothered in ginger-herb tomato sauce, carrot-zucchini ratatouille, and maize pancake. Because why eat githeri the traditional way all the time?

Ingredient

1 cup

milk

1 cup

water

To taste

salt

1 teaspoon

ground bay leaves

Cooking instructions

* Step 1

For bean balls, mash the beans.

* Step 2

Reduce the beef broth until it is very concentrated and mix into the bean mash.

* Step 3

Slice the onion and caramelise it in oil, then mix into the mash.

* Step 4

Add all the other ingredients to make the final mash. If it is too soft, add some extra mashed beans to solidify it. Check seasoning.

* Step 5

Make balls and bake in the oven till well set. (Remember all the ingredients except egg are cooked so you don't need much time).

For the ratatouille, suet the minced ginger in some oil.

* Step 7

Blend the tomatoes and add to the ginger.

* Step 8

Add the herbs, spices and seasoning.

* Step 9

Boil until the tomato sauce reduces to a thick liquid.

Add the cubed carrots and cook until a bit soft.

* Step 11

Add the zucchini and cook for a few minutes.

* Step 12

For maize pancake, blend the maize in the milk.

* Step 13

Mix with wheat flour, salt, and water to make a very thick batter.

* Step 14

Cook the maize batter in a pan like pancakes.

* Step 15

Combine the components by putting the bean balls and maize pancake on the plate and taking some of the tomato sauce from the ratatouille to coat the bean ball then the vegetables to the side.

Or you can flatten the bean balls and make a vegetarian burger. Here I made a sandwich by using two slices of the maize pancake, putting a flattened bean ball in the middle, and putting the ratatouille tomato sauce as sandwich dressing.

I hear curry is a huge world of personal interpretation, so here's one of mine. For me if fenugreek is present we have curry.

Ingredient

2 tablespoons

dark soy sauce

2 tablespoons

chili oil

1 tablespoon

black pepper

1 tablespoon

turmeric powder

1 tablespoon

fenugreek powder

1 tablespoon

garlic powder

1 teaspoon

dried mint

To taste

salt

Cooking instructions

* Step 1

Boil the beans, tomatoes, okra, soy sauce, stock, rosemary concentrate and black pepper together in enough water to cover until the tomatoes are completely broken down and you have a thick stew.

* Step 2

Add the carrots and cook a few minutes.

* Step 3

Add all the other herbs and spices and chili oil and cook until the spices are not tasting raw. Remember to keep adding a little water if the curry gets too thick.

* Step 4

When the curry is ready, mix in the onion and green capsicum, switch off the heat, and leave to steam for some minutes until soft.

* Step 5

Serve. Best with rice but also good with chapati.

1 tablespoon

dark soy sauce

1 tablespoon

chili oil

1 teaspoon

choma sauce

Cooking instructions

* Step 1

Boil the chicken with the chopped tomatoes, hoho, herbs, spices, oil and seasonings in enough water so that by the time it has reduced to a thick sauce, the chicken is cooked and soft.

* Step 2

When it is cooked, add the chopped onion and cook for a bit until the onion is a bit wilted but still crunchy.

* Step 3

This is my go-to chili oil.

I once learnt about a cake made out of stacking pancakes and have been trying to create the perfect one since. I also got another chance to use my raw papaya syrup. #wheaflour

Ingredient

3 tablespoons

chia seeds

3 tablespoons

brown flax seeds

1 tablespoon

ground bay leaves

To taste

herbal salt

500 ml

water

2 tablespoons

baking powder

2 tablespoons

chili oil

Cooking instructions

* Step 1

Grind the flax and chia seeds together and put in mixing bowl.

* Step 2

Add salt, bay leaves, rosemary concentrate, and water and mix thoroughly.

* Step 3

Add flour and baking powder, enough to make a thick batter.

* Step 4

Put batter in the blender to make it smooth.

* Step 5

Mix in the chili oil.

* Step 6

Make approx 15cm diameter pancakes.

* Step 7

When pancakes are done and cooled, spread fruit syrup on each and stack them.

* Step 8

Serving suggestion: cut out wedges and drench in more syrup. The tastier the syrup the better. Get good quality jam or marmalade, add little water with herbs and spices, and boil to syrup - or just use fresh fruit (see my raw papaya syrup recipe). Jam fruit are perfect. Personally my favourite would be granny smith apples. But the raw papaya one, it's beautiful.

I decided to try one of my favourite Mexican sauces for my kunde, which I'm not very fond of, and it worked wonders! Chocolate or cocoa is the key here. Mole is a very elaborate sauce that takes many hours to make and has many ingredients but I simplify it to just the basic flavours. I also eliminated the chili from it because I wanted it mild.

Ingredient

2 bunches

kunde leaves

2 tablespoons

cocoa powder

5 pods

okra

3 tablespoons

vegetable oil

1 teaspoon

dried mint

1 tablespoon

black pepper

To taste

salt

Cooking instructions

* Step 1

For greens, wash the greens thoroughly and, while still whole, blanch for a few seconds in boiling water. Let cool and then cut into strips.

* Step 2

Cut the garlic and ginger into very small pieces and suet in the oil.

* Step 3

Add the chopped tomatoes and okra and cook until the tomatoes break down.

* Step 4

Deglace with the rosemary concentrate and add the cocoa. Let cook until it is a thick liquid.

* Step 5

Add the salt, spices and herbs (minus sugar and citric acid or lemon).

* Step 6

After you have a very thick liquid, take out the bay leaves, chop the almonds very finely and add to the sauce together with the greens. Cook until greens are tender.

* Step 7

Taste and then use the citric acid/lemon and sugar to round out the flavours. They are optional.

* Step 8

For the stir-fry, cut the onions and hoho into strips.

* Step 9

Fry them in the oil for a bit then add the mbaazi and season with salt.

* Step 10

Add a little water to avoid sticking and keep stirring until it is hot.

* Step 11

Serve with brown ugali.
