Ingredient

40 ml

oil

1/2 tsp

Shahi zeera

1 tsp + 1 tbsp

ghee

as required

Salt to taste

1/2 tsp

sugar

1 tbsp + 1 tbsp

biryani masala

1:2 ratio

Cooking instructions

* Step 1

Clean the rice with water. Strain and let it be as such for some time. Meanwhile cut the vegetables,onion and keep all the other ingredients ready.

Next into the strained rice, put a tsp of ghee, little salt and a tbsp of Shahi biryani masala. Give a nice gentle mix and keep aside. Next heat a kadhai with oil. Splutter the whole spices. Add Shahi zeera. Next add onion slices and saute till brownish. Next add ginger garlic paste. Saute till rawness is lost. Next add vegetables. Saute for some time. Add salt as needed, sugar and biryani masala. Mix and continue sauteing in medium heat.

Next add curd and mix. Continue sauteing till curd leaves oil. Next add the marinated rice. Saute all together for some more time. Be cautious, don't break rice grains. You will get a nice aroma. Side by side, in a pressure cooker, put water, salt as needed, coriander leaves mint leaves, green chillies and ghee. As the water comes to a boil, add in the sauteed rice mixture. Give a gentle mix. Put the cooker lid and pressure cook for 2 whistles.

Cooked at medium heat. Switch the flame off and let the cooker release pressure. Open but don't immediately disturb the rice. After 10-15 minutes, fluff up the rice and transfer into serving dish. Garnish with birista. Enjoy!!

* Step 1

Take a microwave safe bowl. Put soya granules and green peas. Add water covering them. Microwave for 2-3 minutes. Then strain. Wash under running water nicely. Squeeze to remove the extra water. Keep aside.

Keep all the other ingredients ready.

Next heat oil. Put the whole spices. Add chopped onion. Saute till brownish. Next add ginger garlic paste and saute it's rawness is lost. Next add potatoes. Saute for some time. Next add the strained soya granules and green peas.

Mix well. Let it be on slow to medium heat for some time. Stir mix occasionally. As it changes colour, add the prepared tomato paste. Add salt, turmeric powder, red chilli powder, coriander powder, cumin powder and meat masala. Mix and cook till all the flavours combine well with each other.

Next add water. Cook at slow to medium heat. Now add kasuri methi and slit green chillies. As everything comes into a nice boil, put garam masala. Let it be on medium heat. As you reach the required consistency, switch the heat off.

mustard oil

cumin seeds

1/4 tsp

fennel seeds

Prepared masala paste

Cooking instructions

* Step 1

In a mixing bowl, put cleaned fish. Add the above-mentioned ingredients for marination. Coat the fish pieces well, cover and keep aside at least for 30 minutes.

Next as per the above-mentioned ingredients make the masala paste.

* Step 3

Next heat mustard oil. Fry the fish pieces, strain the oil and keep them aside.

Next heat a kadhai with mustard oil. Splutter mustard seeds, cumin seeds and fennel seeds. Add chopped onion. Saute till brownish. Next add ginger garlic paste. Saute for some time.

* Step 5

Next add the prepared masala paste. Mix. Add salt, turmeric powder, red chilli powder. Mix and cook till masala leaves oil

Next add hot water to make the gravy. Put fish masala. Let it come to boil. Then mash a small boiled potato very nicely and add it into the gravy. This makes the gravy thick.

* Step 7

Continue cooking in medium heat. As it comes to boil, add garam masala. As it comes to boil, add the fried fish pieces. Give a gentle mix. As fish gets nicely combined with the gravy, add finely chopped coriander leaves and slit green chillies.

* Step 8

Do not cook anymore. Switch the flame off. Serve immediately.. Enjoy with hot steamy rice and salad..

* Step 1

My kids are fussy for beetroot, they peck and remove the beet pieces, so I add beet water instead of normal water. You too can use the trick for your kiddos too. Take water in a pan, add beetroot pieces (1 small beet). Boil and remove the beet. Keep the beet water aside. Next heat a pan with oil. Saute onion till brownish. Add the chopped vegetables, boiled beetroot pieces and fresh green chillies. Add salt. Mix well. Cover and cook the veggies till softened.

* Step 1

In a mixing bowl marinate the chicken as per the above-mentioned ingredients. Next place a kadhai with oil and heat it. Splutter cumin seeds. Add onion and fresh green chillies and saute till onion is brownish.

Now add the marinated chicken. Mix and cook the chicken by continuous flipping at high heat for 3-5 minutes.

As water is almost evaporated, add the prepared tomato puree. Mix and cook till tomato looses it's rawness.

Meanwhile keep your greens ready. Put spinach leaves (palak) and mint leaves (pudina) on the chicken.

Cover and cook for 2 minutes. As they turn soft, mix well.

Next add chopped coriander leaves, chicken masala and garam masala. Add little water. Mix. Cook without covering till your preferred consistency. Switch the flame off. Transfer into a serving dish.

Next heat oil for tempering. Roast garlic cloves till little brown. Put slit fresh green chilli. Add this tadka on the palak chicken.
