Our oldest chinese restaurant closed, after about 100 years, they left us their two most famous dishes, chinese spaghetti and ginger onion duck. Here is the spaghetti recipe.

Ingredient

* Step 1

Use handmade fresh egg noodles or store bought. In big skillet, Boil the egg noodles al dente. Add sesame oil, garlic, fry till fragrant, set aside

In cast iron skillet, sautee vegetables till soft, add beef broth, ground beef, sauces and spices. Add cornstarch till sauce thickens. Add egg noodles. Fry. Serve.

Prepare ingredients.

Prepare all diced ingredients like bamboo shoots, chicken liver, and shiitake mushrooms, blanch them in boiling water, then remove and drain.

Stuff the mixed diced ingredients into the cavity of the deboned chicken.

Seal the opening and blanch the stuffed chicken again in boiling water, then remove.

Starting from beneath the wings, use garlic leaves to tie the chicken into the shape of a gourd and place it in a container.

Add superior stock, fine salt, and MSG to a pot, dissolve, and pour into the container holding the gourd chicken.

Blanch all the chopped auxiliary ingredients like duck gizzards, rehydrated scallops, dried shrimp, bamboo shoots, peanuts, pork tripe, shiitake mushrooms, and ham in boiling water, then drain.

Pour the cooked glutinous rice into a container, add cooked pork fat, fine salt, MSG, pepper powder, and Shaoxing wine, and mix well.

Combine the seasoned rice with the blanched auxiliary ingredients evenly and transfer into a large container.

Place the chopped fresh mud crab on top of the prepared rice.

* Step 1

Wash bakchoy then blanch for a minute.

* Step 2

Steam Chinese sausage for 5 mins.Then slice it and set aside.

* Step 3

Stir fry garlic and ginger in a pan with oil.

* Step 4

Then drop in bakchoy stir fry it then add oyster sauce.

* Step 5

Cook until done then add sausage.
