My family's aftari is incomplete without pakoras and samosa. It includes Aloo,palak,cauliflower,brinjal and vegetable pakora while the samosas can be of aloo or sometimes qeema filling. #joy

Ingredient

3/4 cup

water

1 cup

Besan

Leaves

Few Spinach

Cooking instructions

* Step 1

Pour the oil in your deep fryer/wok and heat on low flame.

* Step 2

Chop the onion, potato, green chili and green coriander and combine in a mixing bowl.

* Step 3

Add the cumin, crushed red chili, coriander seeds, khatai powder, baking soda, corn flour, salt and gram flour. Mix together.

* Step 4

Slowly add in the water and mix.

* Step 5

Use a tablespoon to put tablespoonfuls of batter into the oil.

* Step 6

Fry until golden brown and crispy, turning as needed to cook evenly.Vegetable Pakoras are ready.

* Step 7

For potato and palak pakora, mix besan and pakora masala and add water to make a batter of medium consistency.

* Step 8

Coat aloo slices and spinach leaves in this batter one by one.

* Step 9

Deep fry them until they turn golden brown.Aloo and Spinach Pakora are ready.

Ab thora thora kar ke pani add karein aur medium consistency ka paste bana lain..na bohot thick ho na bohot ptla.

Even though I am the only one in my family who don't like pakoras. Still, it is the must have item of our Ramadan Dastarkhawan. A secret tip to make them crispier is the addition of soda in them. #cpl #zafran

Ingredient

2-3 tbsp

Pakora Masala

1 pinch

baking soda

Cooking instructions

* Step 1

In a bowl, mix together all the ingredients except water and oil.

* Step 2

Now gradually add the water, a little bit a time, until a thick batter has formed. The vegetables will release water so we don’t want to add too much water.

* Step 3

The batter must be thick so that it evenly coats all the vegetables. If the batter is too thin, it won’t stick to the vegetables. Once the pakora batter is ready, set it aside.

In a medium sized wok, bring oil to a medium high heat.

* Step 5

Using a tablespoon, drop the batter into the oil. Fry only a few pakoras at a time.

* Step 6

Gently flip the pakoras while frying so that they cook evenly from all sides.

* Step 7

Using a slotted spoon, remove the pakoras from the wok and place on a paper towel lined plate.

* Step 8

Serve with green chutney or imli ki chutney.
