Also called Lemon squares are a dessert with a buttery Almond Shortbread Crust and a Lemon Custard layered on top. It's for lunch or afternoon snack or a dessert after dinner. The fillings ( the curd) is fantastic on its own, on toast, or sandwich between cookies.

* Step 1

Preheat oven to 350 F with a rack in the middle position. Lightly grease a 8x8 inch pan, cover with foil (or the baking paper). Push the foil into the corners and up the sides of the pan, using 2 pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray or brush with melted butter.

* Step 2

In a food Processor place the flour, cornstarch, baking powder, 1/2 cup sugar, pinch of salt, process on medium speed for a few seconds.Add the butter and mix to blend for 10"-15" until the mixture resembles coarse meal, pale yellow but to stop before the mixture turns into a ball!Put the dough into the bottom of the prepared pan and press down firmly to form an even layer & compact with the help of a cup.Prick with the fork all over.Bake the crust for 20'-25' until the edges turn golden brown.

* Step 3

Meanwhile waiting for the crust to cook, prepare the Lemon Fillings cook on a heat proof small bowl: place in the bowl 4 eggs, the eggs yolks & soft brown sugar stirring frequently.On a very low heat, whisk in the 3/4 cup-1 cup lemon juice, 3 tbs lemons zest & salt to form a smooth liquid mixture, stirring constantly.(Option: to thicken with 1tbs flour).Dont leave the mixture alone!!Set a small strainer over a mixing bowl&place next to the stove.It's ready to go when the curd is done cooking.

* Step 4

The pan with the Lemon mixture: Stir gently, but continuously until the mixture thickens enough to coat the back of the spoon & register 170 F on an instant-read thermometer; this should take 10'-12'. Be sure to scrape the bottom & edges of the pan as you stir. If you notice the mixture starting to coagulate and clump up, immediately remove the pan from heat.Strain the lemon curd into the bowl,removing the zest & any clumps from the curd. While the curd is still warm, stir

* Step 5

In the butter. Stir until the butter is completely melted. Once the shortbread crust is done cooked in the oven, remove it and put on the working table and immediately pour the Lemon Filling over top of the hot crust. Return the pan back to the oven and bake at 350 F for 10-15 more minutes or until the edges of the curd is set, but the middle is still jiggly.

* Step 6

Then remove the pan from the oven and place on the counter to cool. To slice: Sprinkle the tops bars with Icing sugar powder, then cover and transfer to the refrigerator and let the bars chill for at least 4 hours.Then starts cut into large squares using a chef knife cut around the edge first,then lift them onto a cutting board using the flaps of foil.Cut straight down into bars.😊To serve the square cold with a dullop of whipped cream and a cup of coffee or with a cup of hot ginger tea! 🍋🍸☕😍

* Step 7

To make the Lemon Curd on its own: cook it on the stove top, strain and stir in the butter as directed. No need to bake. Transfer the curd to a small glass jar container with the lid on and refrigerator. Eat within a week.😍

* Step 1

Preheat oven to 180C degrees. Lightly grease a rectangular ovenproof baking dish. Peel the apples and diced into small pieces, arrange spreadly on the base of the baking dish, the scatter the lemon juice on top and sprinkle with icing sugar and then tip the Berries on top of the apples, scatter over the lemon zest then drizzle the running honey or golden syrup over the top Mixed Berries.

To make The Top batter: In a big bowl sift the flour, pinch of salt and soft brown sugar. Make a well in centre, put the 3 beaten eggs into the well, add vanilla essence and mix together and then gradually draw the flour into the eggs from the outside of the well, mixing well, then beat in 1 cup milk a little at a time to form a smooth batter.

* Step 3

Pour the batter over the bluberries and bake for 40' or so, until golden and puffed up. As a dessert serve warm, or cold. Cut into big slice, put onto a serving plate and serve with a dullop of whipped cream or vanilla ice cream.😋🍯🍰🍨🍸🍹

I fancied this pudding for months, finally I make a time to prepare. Any fruits you have is ok but please use a combo of fruits. On top fruits I've prepared a 'My Homemade Sponge', in this time of Lockdown. The results is surprisingly cool. A wonderful pudding in winter season, make happy our family, can be serve warm or cold.🍊🍎

* Step 1

Pre-heat oven to 200C. Lightly grease a square ovenproof baking dish.To prepare a stew apple. In a small pot heat on the stove put 1tbs water to warm the pot then put the apples,1 tbs lemon juice,the zest and let it cook for 5' in medium heat until almost cook then add the 1 tbs soft brown sugar and stir until sugar has dissolved, then turn off.Cool 5' then transfer on the prepared baking dish and spread evenly.Drain the peaches and spread the fruit peach slices evenly on top of the stew apples.

In a medium bowl put the eggs&soft brown sugar, beat with an electric mixer for 5'. Add 1tsp vanilla extract&mix with a big spoon for a 2 turn over'.In another small bowl put the Self-raising flour,plain flour, cornflour&baking powder&mix.Pour the dry ingredients into the eggs mixture&with a big spoon gently fold,then add milk to get smooth batter but don't overmix as the sponge texture become slightly hard once been baked.Pour batter on top of the peaches.Then spread Almond Flakes on top batter

* Step 3

Place the baking dish in the middle rack of the oven and bake for 30' until puff up, nicely risen and has a golden colour on top of the cake. Touch on the centre cake it is solid firm or do a test, inserts a knife on top centre of the cake and it comes out dry. Turn off the oven, remove the cake. Let it cool for 10' in the baking dish. With a sharp knife loosen all around the edge of the cake.

To serve warm or cold. Cut into a portion and with a spatula put it on a serving plate. On top put a dullop of whipped cream or 2 tbs custard sauce 😙 🍽🍰☕🍸

Moist, dark & fluffy cake with an squisite frosting. It's a cake for my birthday the last month with this Chocolate Cake. Sorry I forgot to do the shots photo with my camera. 💗 This cake is also good for special occasions like Christmas, New Year, Easter and Thanksgiving day.

Ingredient

2 1/2 cups

* Step 1

Preheat oven to 350F or 180C. Grease bottom & sides and line of a deep round cake tin of 9 inch. If you don't have buttermilk then make it: mix 1 cup Milk with 1 tbs lemon juice. Set aside. In a small saucepan I put 1 1/2 cups boiled water & 2 tsp instant coffee and stir. Than quickly add the dark chocolate pieces and stir until chocolate pieces are dissolved. Set aside to cool.

In a large bowl put on a colander sift flour, cocoa,baking soda,baking powder, salt. Add soft brown sugar &mix.Add the melted butter& then vanilla,blend on low speed until incorporated.In a small bowl whisk eggs in buttermilk,add into larger bowl while mixing in slow speed then increase speed to medium-high& blend until smooth,about 3'.Slowly pour in the chocolate-coffee mixture until evenly blended,then scrape batter equally between prepared tins, tapping tins gently to remove any large bubble.

Bake cakes for 40'-50', until a skewer inserted in the centre of the cake comes out clean. Cool for 20' in the tins, them carefully turn out onto a cooling rack to cool completely.

FROSTING: in a medium bowl, beat cream cheese, butter on high speed, scraping sides frequently until light & fluffy. Reduce speed and add cocoa, icing sugar and beat until smooth. Add 1 cup Milk or 1 cup double cream & pinch of salt and mix. Slice the cooled cake in half. Spread on each top of cakes with the frosting mixture, smooth surface with spatula, then place the second half cake on top of the base. Spread the rest of the frosting on sides cake. The cake taste better the next day!

* Step 5

🎂Put one or more candles on top centre of the chocolate cake. GARNISH: 🍰Put the strawberries halves on top of the cake all around the edge.(or put the mandarin's segments). Place in a cool place to set at room temperature & not in the refrigerator.

* Step 6

To serve: cut the cake into pieces. 🎈🎉🎊🎂🍾🍷💗🎼🎵🎶. Let's us sing together the birthday song with the family, then myself I do blow the candles... 🍰Cut, place a piece of cake in a serving individual plate with a custard sauce. Enjoy

* Step 1

Preheat oven to 180 C in 15'

* Step 2

In Bain Marie, below pot has the boiling water while the top pot put the chocolate and butter& oil to melt. Remove when is melted. Let it cool a little.

* Step 3

In a bowl put the eggs, soft brown sugar and vanilla essence beat with electric beater until creamy and smooth. Then pour the melted chocolate mixture into the eggs mixture and mix with big spoon until combined.

* Step 4

Mix flour and cacao then put this flour mixture into the batter, a little portion at a time. Mix with spoon until smooth then transfer the batter into the prepared baking tray. Smooth top with the spatula. Sprinkle topping with pre roasted almonds or walnuts. Let the bottom tray from 25cm height, fall down banging onto the working table, 2-3 times to smooth the batter.

* Step 5

Put the baking tray in the oven, turn down the oven temp to 170 C, placed on the rack that is far from the fire bar. Bake for 25'-30'. Don't let the cake overcook otherwise it become dry/ no more moist texture.

* Step 6

When is cook, remove the tray from oven. Let it cool in the tray for 10'. When is completely cold, then start to cut in square portion. Yummy 🤹‍♀️🤹‍♂️
