I don’t eat Aioli very often. Whenever I want to serve it, I quickly make this cheater’s version. It tastes good anyway. Today I enjoyed it with hot Chips. It is yummy with fried Seafood, grilled Chicken, OR steamed Vegetables. It can be used to make Potato Salad OR as a sandwich spread.

Ingredient

1-2 teaspoons

Lemon Juice

* Step 1

Combine all the ingredients. Enjoy with Chips, Vegetable Sticks, etc.

Today I tried to cook ‘Ukrainian Pork Meatballs’ replacing Pork Mince with Chicken. I deep-fried them because the mixture was very soft and deep-frying was easier. The meatballs turned out like Chicken Nuggets, so I decided to call them Chicken Nuggets. I strongly recommend to use coarsely minced Chicken Breast Fillets. It is easy to chop up using a knife. If you have a food processor, the whole preparation would be super easy.

* Step 1

Finely grate Onion and drain. I recommend to press the grated Onion to remove excess water. You can very finely chop up.

* Step 2

Chop up Chicken Breast Fillets into coarse mince. You can use already minced Chicken Breasts, but I strongly recommend to add some coarsely chopped meat as well.

* Step 3

In a mixing bowl, combine Chicken, drained Onion, Garlic, Egg, Salt & Pepper and Mayonnaise. Add ‘Panko’ Breadcrumbs and mix well. If the mixture is too soft, add extra ‘Panko’, but please remember you won’t need to roll the mixture into balls, and it can be fairly soft.

* Step 4

*Note: If you don’t have ‘Panko’ Breadcrumbs, you can add Flour and Corn Starch instead. The texture should be like soft dough.

* Step 5

Heat Oil, at least 5cm deep, use 2 large spoons to drop some large bite-size clumps of the mixture into the Oil, and deep fry. Turn them over a few times. When nicely browned and cooked through, transfer to a rack and drain the oil.

* Step 6

*Note: Shallow frying is an option. Use a generous amount of Oil to cook.

* Step 7

Serve with Ketchup, BBQ Sauce OR your favourite sauce.

Because I have been cooking Ukrainian dishes lately, I always have Sour Cream and Dill in my fridge. I just mixed leftover Azuki Beans and steamed Sweet Potato with Sour Cream. I also added Dill. This dish is something I would never have thought of making if I hadn’t cooked Ukrainian dishes. New something often leads us to another new something.

Ingredient

2 tablespoons

Sour Cream

Cooking instructions

* Step 1

Cook Azuki beans in salted water in a saucepan until soft, then drain. *Note: You don't need to soak Dry Azuki Beans over night.

* Step 2

Peel Sweet Potato, cut into small pieces, then boil in salted water OR steam until soft. Today I steamed.

* Step 3

Place cooked Azuki beans and Sweet Potato pieces in a mixing bowl, and season with Salt & Pepper. Add Sour Cream and Mayonnaise, and mix to combine. *Note: You can add some chopped fresh Dill if you like it.

This salad is known as ‘Dniester’ Salad in Ukraine. Is that true? Smoked Sausage is used for this salad, but it is impossible for me to find Ukrainian Smoked Sausage. I heard that Polish ‘Kielbasa’ is similar to Ukrainian Smoked Sausage. If you can find ‘Kielbasa’, you may wish to try it. For most Australians, Kabana is the easiest alternative. European Smoked Sausages that can be eaten without cooking them would be suitable, but I think Spicy Sausages are not very good. Some people add Boiled Eggs to this salad, and I think it is a great idea.

* Step 1

Thinly slice Cabbage, place in a mixing bowl, add Salt, mix to combine, and set aside for 15 to 30 minutes. Squeeze (OR press) to remove excess salty water.

* Step 2

Blanch Peas in salted water in a saucepan and drain. If you use Canned Peas, drain well. Slice Smoked Sausage and cut into strips.

* Step 3

Place squeezed Cabbage, drained Peas and sliced Sausage in a mixing bowl, add Sour Cream, Mayonnaise and Ground Pepper, and mix to combine.

* Step 4

*Note: You may wish to add some Herbs such as Parsley OR Dill.

I have made many different Meatballs in my life, but this is definitely one of the top 3. These ‘Ukrainian Pork Meatballs’ are absolutely delicious. I looked at several recipes that I found on the internet, and again I found they use too much Salt. I reduced the amount of Salt for my recipe. Using the ingredients that are easily available in Melbourne, Australia, this is the easy recipe for anyone who wants to try Ukrainian Pork Meatballs.

Ingredient

* Step 1

* Step 2

In a mixing bowl, combine Pork Mince, drained Onion, Garlic, Egg, Salt & Pepper and Mayonnaise. Add ‘Panko’ Breadcrumbs and mix well. If the mixture is too soft to roll, add extra ‘Panko’.

* Step 3

Roll the mixture into 3cm size balls and slightly flatten. Coat with Fine Breadcrumbs. The Meatballs look like small patties.

* Step 4

Heat a generous amount of Oil in a frying pan over medium low heat, cook the Meatballs, in batches, until both sides are nicely browned and cooked though. Repeat with remaining Meatballs.

* Step 5

*Note: Alternatively, you can bake the Meatballs in the oven. Preheat the oven to 200℃, bake for 15-20 minutes OR until Meatballs are browned and cooked through.
