Rice Cooker Lamb Spinach & Fetta Frittata

This ‘Rice Cooker Frittata’ has been inspired by Greek ‘Lamb & Spinach Spanakopita’ which I LOVE. Basically I added the same ingredients to my Frittata mixture and cooked it in the rice cooker at ‘Cake’ setting. As always, the top side of the Frittata can’t be browned when cooked in the rice cooker, but it looks just fine when it’s flipped over on the plate.

Ingredient

1 tablespoon

Cooking instructions

* Step 1

Line the base of rice cooker’s inner pot with baking paper. *Note: It might be unnecessary depending on the condition of your inner pot.

* Step 2

Heat Olive Oil in a frying pan over medium heat, cook Onion, Garlic and Lamb Mince until Onion is softened. Add Mixed Herbs, and season lightly with Salt & Black Pepper. Add Baby Spinach. It would be a little tricky to cook Baby Spinach, but the volume of Baby Spinach will instantly reduce. When wilted, remove from heat and set aside.

* Step 3

Place Eggs, Self-Raising Flour, Salt & Black Pepper in a mixing bowl, and mix well. Add crumbled Fetta, Parsley and Lamb & Spinach mixture, and gently mix to combine.

* Step 4

Pour the mixture into the prepared rice cooker’s inner pot, spread evenly, and start cooking at ‘Cake’ setting.

* Step 5

If it is not cooked yet, leave it in the hot rice cooker for 10 more minutes or heat extra time. Turn out on a plate, and carefully peel away baking paper. Serve hot or cold with a refreshing salad.

* Step 6

*Note: I used my 10 cup capacity rice cooker which inner pot is 20cm in diameter. I took it out after 35 minutes.

You can use leftover Roasted Potatoes OR Chips to cook this Frittata. Today I boiled 2 Potatoes. I always add some Flour to the mixture, so that it cooks better in the rice cooker. If you are going to purchase a rice cooker, I recommend to invest a little more money and get one has ‘Cake’ setting. Food preparation would become so much easier.

Ingredient

15 g (1 tablespoon)

Butter OR Oil

Cooking instructions

* Step 1

Line the base of rice cooker’s inner pot with baking paper. *Note: It might be unnecessary depending on the condition of your inner pot.

* Step 2

Peel Potatoes, cut into small cubes, cook in salted water until just soft enough, then drain. *Note: If you use already cooked Potatoes, just cut them into small pieces.

* Step 3

Melt Butter in a frying pan over medium heat, cook Onion, Garlic & Bacon until Onion is soft.

* Step 4

Combine Eggs, Self-Raising Flour, Salt & Pepper in a mixing bowl. Add Onion & Bacon mixture, Potato and shredded Cheese, and mix to combine.

* Step 5

Pour the mixture into the prepared rice cooker’s inner pot, spread evenly, and start cooking at ‘Cake’ setting.

* Step 6

If it is not cooked yet, leave it in the hot rice cooker for 10 more minutes or heat extra time. Turn out on a plate, and carefully peel away baking paper. Serve hot or cold.

*Note: I used my 10 cup capacity rice cooker which inner pot is 20cm in diameter. It took 40 minutes for my rice cooker to cook it.

Today I cooked Asparagus Pasta, which is a very popular dish. Some people season it with Lemon Juice, some people add Cream, and I was going to season it with Soy Sauce. ‘Olive Oil, Garlic and Soy Sauce’ is a great combination, and I love the the flavour. However, I added Seasoned Kombu (Kelp) that is called ‘Shio Kombu’ (塩こんぶ) in Japanese. ‘Shio Kombu’ is strongly seasoned with Soy Sauce and it is often used as a seasoning. Yes, I added Parmesan. You probably have no idea how this dish tastes like. You need to cook it and taste it. If you couldn’t find ‘Shio Kombu’, you can add some Soy Sauce instead.

* Step 1

Cook Pasta in boiling salted water according to the instruction on the package. Prepare vegetables.

* Step 2

When Pasta are half cooked, heat Olive Oil in a frying pan over medium heat, cook Onion and Garlic for a few minutes, then add Asparagus. When Asparagus are firmly cooked, add Edamame and 1/4 cup of the salted water that is cooking Pasta. Lightly season with Salt and Pepper.

* Step 3

Drain the cooked Pasta, add to the pan, then add Seasoned Kombu (Kelp) as well, and mix to combine. Remove from the heat, add grated Parmesan, and combine. Sprinkle with the saved Parmesan on top and enjoy.

My rice cooker has ‘Cake’ setting. I have found it is the best way to cook Upside-down Cakes, but it is perfect for cooking crust-less Quiche and Frittata as well. I have shared my ‘Rice Cooker Zucchini Frittata’ and ‘Spinach and Ham Frittata’ recipes on this website. Here is another one for you to try. Rice cooker doesn’t do everything for you. You need to precook Beef Mince, Onion and Garlic, and also Potato as well. While your rice cooker is cooking Frittata, you can make a salad, clean up the kitchen, and relax.

When I was terribly busy and couldn’t think about dinner, I just cooked Chicken Fillets and combined everything in the pan, then left in the oven. That is how I invented this dish. Using an oven-safe pan, this dish can be prepared easily. If you use already seasoned Tomato Pasta Sauce, it would be even easier. I usually serve this dish with rice, which can be done by a rice cooker. Easy and yummy, and everyone is happy.

Ingredient

1 tablespoon

Olive Oil

400-500 g

Passata

Cooking instructions

* Step 1

Preheat oven to 240 to 250℃. Cut each Chicken Fillet into halves or quarters. Season with Salt & Pepper.

* Step 2

Heat Oil in an oven-safe pan over high heat, cook Chicken. After browned both sides, add Garlic and Onion, and cook until Onion is soft.

* Step 3

Add Passata, stir in Herb and bring to the boil. (You can use Tomato Pasta Sauce instead of Passata.) Season with Salt & Pepper as required. Sprinkle Shredded Cheese over, and bake for 10 minutes or until top is golden.

* Step 4

Sprinkle with finely chopped Parsley and serve with rice or pasta.
