People often ask me how to cook Miso Soup. The answer is simple. Cook ingredients in Dashi Stock, that can be Katsuo (Bonito), Kombu (Kelp) OR Iriko (Dried Sardines), OR Stock of your choice. Then season the soup with Miso. Miso’s saltiness varies, and everyone has a different taste, so you need to taste the soup and figure out how much Miso you need to add. Today’s ingredients are Okra, Wakame and soft Tofu. The soup was slightly thickened because of Okra. It was delicious!

Ingredient

Cooking instructions

* Step 1

Heat Dashi Stock (OR Water & Dashi Powder) in a small saucepan. *Note: If you use Dashi Powder, use a good quality one. You would need 1/2 teaspoon for 1 cup Water, OR use it according to the instruction on the package.

* Step 2

Add Okra and Dried Wakame, and cook until Okra is soft. Season with Miso, then add Tofu. Add some finely chopped Spring Onion if you like. *Note: I recommend to add any ingredients that are fragile and don’t need to be cooked, such as Tofu, after you finished seasoning the soup.

Chicken & Wakame Harusame Soup

For this Harusame Soup, Chicken can be replaced with Pork OR Beef. I often add Ginger to Wakame Soup, but I added Garlic to this soup. This is a Korean inspired version of Wakeme Soup. Add Harusame Noodles (Bean Thread Noodles) to the seasoned soup. Noodles get cooked very quickly and make this soup more filling and comforting.

Ingredient

Cooking instructions

* Step 1

Prepare all ingredients before you start cooking.

* Step 2

Heat Chicken Stock in a saucepan, add Garlic and Sesame Oil, and bring to the boil. Season with Soy Sauce, Salt and White Pepper.

* Step 3

Add Chicken, cover with a lid, and cook for a few minutes. Add Dry Harusame Noodles and Wakame, and cook until the noodles are soft. It won’t take long.

Add some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

I occasionally crave this Udon Soup with Wakame & Nori. It can be just the soup, but I often add Cooked Udon Noodles and make it into a meal. It is probably not very nutritious, but it’s OK as my diet is generally well balanced. You probably have some particular foods you occasionally crave. This is one of mine.

Ingredient

1 tablespoon

Dried & Cut Wakame

300 ml

Water

1/4 teaspoon

Salt

1 tablespoon

Sake (Rice Wine)

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Mirin

Cooking instructions

* Step 1

Place all the Soup ingredients in a saucepan, and bring to the Boil. *Note: Alter the amount of Salt OR Soy Sauce to suit your taste.

* Step 2

Add Cooked Udon Noodles and Dried & Cut Wakame, and heat until Udon Noodles are soft.

* Step 3

Place in a serving bowl, scatter Nori, add some finely chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.

Soy Bean Salad with Gochujang Mayo Dressing

Please use Boiled Soy Beans OR Edamame Beans (Young Soy Beans) for this salad. Crunchy Vegetables are suitable for this salad as the Boiled Soy Beans and Edamame Beans are crunchy. You can season this salad with your favourite dressing, but today I used the same Gochujang Mayo Dressing that I used for ‘Cabbage & Nori Salad’.

Ingredient

1/2-1

Cucumber

1/2-1

Carrot

1 pinch

Salt

2 tablespoons

Dried Cut Wakame

1 teaspoon

Soy Sauce

1 teaspoon

Sesame Oil

1/2 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

Combine all the Dressing ingredients in a small bowl. *Note: Alter the amount of Gochujang (Korean Spicy Miso) to suit your taste.

* Step 2

Cut Cucumber and Carrot into small pieces and place in a mixing bowl. Add Salt and Soy Beans (OR Edamame Beans), and mix to combine.

* Step 3

Add Spring Onion, Dried Cut Wakame and the Dressing, and mix to combine.

* Step 4

*Note: Dried Cut Wakame will get soft and retain firmness when mixed with other ingredients. If you want Wakame absolutely soft, you need to soak it in water until soft, then squeeze to remove excess water before you add it to the salad.

When I don’t want to cook on a hot summer day OR I am just simply too tired, cold Silken Tofu can be a meal. In Japan, there is a dish called ‘Hiyayakko’, that is the dish of chilled soft Tofu enjoyed with a variety of sauces and vegetables OR condiments. I was going to make it today, but the Tofu accidentally broke into pieces, and the dish ended up such a salad. However, it was really good and I quickly took a photo. This is how I made it.

Ingredient

2 tablespoons

Dried Cut Wakame

1-2 leaves

Iceberg Lettuce

1/2 tablespoon

Sugar

1/2 tablespoon

Toasted Sesame Seeds

1 tablespoon

Soy Sauce

1 tablespoon

Rice Vinegar

1/2 tablespoon

Sesame Oil

Cooking instructions

* Step 1

Soak Dried Cut Wakame in water until soft, drain well, and squeeze to remove extra water.

* Step 2

Combine all the Dressing ingredients in a bowl, add Wakame, and mix to combine.

* Step 3

Tear Iceberg Lettuce into bite-size pieces and place in a serving deep plate. Break OR cut Silken Tofu and arrange on the Lettuce.

* Step 4

Spoon the Wakame over Tofu, drizzle all the dressing, sprinkle with some finely chopped Spring Onion, and enjoy immediately.
