Canned Sardines & Shimeji Takikomi Gohan

This rice dish is extremely easy to make if you have a rice cooker. Place all ingredients, except for Edamame Beans, in the rice cooker’s inner pot and press the button to start. I used only 1 can (120g) Sardines in Olive Oil. If you want to add more Sardines, you need to alter the amount of Water and Soy Sauce.

Ingredient

150 g

Shimeji

1 tablespoon

Mirin

2 tablespoons

Soy Sauce

1 can (120 g)

Sardines in Olive Oil

Cooking instructions

* Step 1

Wash Rice, drain, and place in the rice cooker’s inner pot. Add Water up to the 2-cups marking, add Dashi Powder.

* Step 2

Cut off the bottom of Shimeji, tear into smaller pieces, and spread evenly. Sprinkle with Soy Sauce and Mirin. Empty the can of Sardine into the pot, that means you add all the oil and liquid in the can as well.

*Note: If you use a larger size can of Sardines with more liquid, reduce the amount of Soy Sauce slightly as the liquid in the can is quite salty. If you use a can of Sardines in Brine, I recommend to drain the Brine and add 1 tablespoon Oil.

* Step 4

Press ‘COOK’ button to start cooking.

* Step 5

When the rice is cooked, scatter Edamame Beans, let steamed for 10 minutes.

Gently mix to combine. Sprinkle some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy. *Note: I added Crispy Chilli Oil as well, but it is optional.

Ramen has become very popular in Melbourne where I live. It seems ‘Tonkotsu’ Ramen is the most popular one. To make the ‘Tonkotsu’ Ramen Soup, you need to boil the Pork Bones for a long time. This Mock ‘Tonkotsu’ Ramen Soup is quick & easy and tastes good. If you use plant-based Stock and Milk, it can be vegan.

Ingredient

1 teaspoon

Sesame Oil

1/2 teaspoon

grated Garlic

1/2 teaspoon

grated Ginger

1 tablespoon

Soy Sauce

1/4 cup

Milk

Cooking instructions

* Step 1

Place all the Sauce ingredients in a saucepan, bring to the boil, and stir well. Alter the amount of Salt.

* Step 2

Meanwhile, cook Ramen Noodles according to the instruction on the package.

* Step 3

Place the soup in a bowl, add drained Ramen Noodles, and place your favourite toppings. Sprinkle with some Toasted Sesame Seeds and enjoy.

When I am too tired to cook anything, a rice bowl is the go-to dish as I almost always have some Cooked Rice. Canned Fish is a life-saver, and it allows me to make a rice bowl quickly and easily. I have shared many easy rice bowl recipes on this website. Here is another one for you to try. You need a small can of Mackerel. Just mix everything together and pour it over the Cooked Rice. A delicious and nutritious meal will be ready in a few minutes.

Ingredient

1 tablespoon (15 ml)

Miso *White Miso recommended

2 tablespoons

Water

1/4 teaspoon

grated Ginger

1 can (120 g)

Mackerel in Brine

Cooking instructions

* Step 1

Place Miso, Water, Dashi Powder and Ginger in a bowl, and mix well. Add Cucumber and mix to combine.

* Step 2

Drain canned Mackerel, break into bite-size pieces, add to the bowl and mix. Then add Tofu and Spring Onion, and gently combine.

* Step 3

Half fill a bowl with Cooked Rice and cover it with the mixture. Sprinkle with some Toasted Sesame Seeds, and enjoy. *Note: I saved some Spring Onion and placed on top.

There is a very popular leafy vegetable called ‘Komatsuna’ in Japan. It’s impossible to find it in Melbourne where I live. However, there is a substitute. An Asian vegetable called Choy Sum is very similar to ‘Komatsuna’. This is a very popular stir-fry dish of ‘Komatsuna’, but I used Choy Sum.

Ingredient

200 g

Enoki

1 tablespoon

Sesame Oil

1 pinch

Salt

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Wash Choy Sum very well, cut into 5cm long pieces, and separate hard stem parts and green leafy parts.

* Step 2

Cut off the bottom of Enoki, clean them, cut in half, and tear into smaller clusters. Prepare Garlic and Ginger.

* Step 3

Heat Sesame Oil in a frying pan, cook hard parts of Choy Sum over high heat for a few minutes, add Garlic and Ginger, and stir. Then add leafy parts, add Salt, and stir.

* Step 4

Add Enoki, Dashi Powder, Soy Sauce and Mirin, and stir-fry until Enoki is soft. Taste it, and add extra Salt if required.

There are some different methods to make ‘Soy Bean Takikomi Gohan’. You would find the recipes that say you can cook with Uncooked Soy Beans. That’s true, buy Soy Beans would be VERY CRUNCHY if you cook Uncooked Soy Beans and Rice together. I recommend to pre-cook the soaked Soy Beans. Soy Beans would be still crunchy but the crunchiness would be enjoyable if you pre-cook them.

Ingredient

1/2 teaspoon

Salt

450 ml

Water

1 tablespoon

Sake (Rice Wine)

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Rinse Dried Soy Beans, place in a saucepan, cover with plenty of cold water, add 1/2 teaspoon Salt, and soak overnight.

* Step 2

Cook the soaked Dried Soy Beans in the saucepan for 20 to 30 minutes. This can be done in advance.

* Step 3

Wash Rice and place it in the rice cooker’s inner pot. Drain the Cooked Soy Beans, place over the Rice, add 450ml Water, Dashi Powder, Salt and Sake (Rice Wine), but do not stir.

* Step 4

Cut ‘Abura-age’ into small pieces, scatter over the Rice evenly, sprinkle with Soy Sauce, and start cooking.

* Step 5

When the Rice is cooked, let it steamed for 10 minutes. Then loosen and mix gently.

* Step 6

Sprinkle with some finely chopped Spring Onion OR Toasted Sesame Seeds (OR both), and enjoy.
